Fasting Bakery Products You Can Include in Your Business Menu!

The period of Lent, and fasting in general, presents another challenge for the bakery sector and its adaptations. Beyond the religious reasons for fasting, many also adopt it as an opportunity for detox and a shift toward healthier choices. Due to this abstention from animal products, including eggs and other dairy, the Loulis Mills team offers the following suggestions, which are part of a diet focused on plant-based ingredients.

These traditional Cypriot treats are typically consumed during Lent, especially on Holy Saturday, and are made from yeast dough, mixtures of cheeses such as feta or halloumi, eggs, and herbs such as mint and parsley. Introduce your customers to neighboring cuisines if your audience is open to new flavors and options.

A landmark of Greek Easter is the traditional koulourakia, which are purchased well before Easter and during the Lenten period. Whether you choose the classic traditional recipe or decide to introduce unique flavors this year, such as raisin or coconut cookies, they are sure to sell out quickly.

Using simple ingredients such as honey and sesame, traditional melitines are small sweet pastries typically served on festive occasions. Initially, the dough is prepared with flour, water, and olive oil, then shaped into small rounds before brushing with egg and adding sesame and honey. The result is a sweet taste with a pronounced walnut note, pairing harmoniously with coffee.

Among the most beloved syrup-based desserts, kataifi is also a must of tradition during fasting periods. Filled with nuts, spices, and sugar, and served with syrup or honey to add sweetness, it is not made with refined sugar, making it a tasty choice for those observing Lenten dietary restrictions.

Another tonic treat to include on your menu during long fasting periods is pasteli. Rich in all essential nutrients and considered a superfood, you can offer any version, whether it includes almonds, pistachios, or even dark chocolate or cranberries. Try its various flavor combinations to satisfy your customers.

Lent, therefore, is a period and opportunity to enrich your menu, experiment with ingredients, and bring new ideas to the table.
