Pizza: Always Evolving. Yet Irreplaceable.

Loulis Mills_Pizza: Always Evolving. Yet Irreplaceable.

The history of pizza dates back many centuries! Its ancestor was flatbread, which over time became a beloved food in many great civilizations, including the Egyptians, Ancient Greeks, and Romans.

In these early versions, it was often topped with ingredients like herbs and oils, resembling the focaccia we know today. However, pizza in its modern form was born in southwestern Italy, specifically in the Naples region.

  • Its History

Since the late 18th century, street vendors sold flatbreads topped with garlic, salt, herbs, cheese, and other ingredients on city streets. At that time, pizza in this early form was the food of poorer workers, who needed a solution that was not only convenient but also nutritious.

Everything changed in 1889 when pizza received the “royal approval” from King Umberto and Queen Margherita. From them, as you might have guessed, comes the name of the well-known Margherita pizza.

  • Its Present

The qualities that made pizza popular at its beginnings are the same that have given it a special place in our hearts and diets today. Regardless of dietary preferences, there is a pizza for everyone: vegan, meat lovers, gluten-free, ethnic varieties.

Pizza is such a “versatile” creation that one could say it is the only food you can make entirely your own way and still have it universally recognized as pizza!

  • Its Future

No matter how versatile pizza is in preparation, there is one ingredient that is hard to change once you find the right one: the flour.

For this reason, our team at Loulis Mills dedicated nine months to research, using over 4 tons of product for testing in collaboration with more than 25 specialized partners from top pizzerias across the country. This led to the creation of a new range of flours for authentic Italian pizza dough: TIPO 00 Classico, TIPO 01 Rustico Stone Mill, and Pizza Spolvero. The one pizza ingredient you won’t want to replace!
