But puff pastry has its own history, beginning in 1645 in France with Claudius Gele, an apprentice cook/pastry chef. In an effort to create an improved version of bread for his father, who followed a specific diet, he added butter to the dough. He then folded the dough several times before shaping it into a loaf.

Despite being warned by the head chef not to bake it, as the butter would run out, the apprentice baked it anyway—creating, to his surprise, the puff pastry we know today.

Even today, puff pastry remains one of the most loved forms of dough. From our earliest school days, puff pastry has been closely associated with the school snack, whether as a breakfast or mid-morning treat.
