Organic Cheese bread
INGREDIENTS
For the dough
- 2800 g Organic Wholegrain Rustic flour
- 1200 g Organic Baking flour
- 100 g salt
- 40 g fresh yeast
- 2450 g water
- sourdough (ingredients and directions below)
Sourdough
- 1000 g Organic Wholegrain Rustic flour
- 1000 g water
- 50 g yeast
- Mix all the ingredients in a bowl and let the dough rest in the oven for 90 minutes.
For the filling
- 3000 g hard feta cheese
- 425 g orange pepper, finely chopped
- 9 g oregano
- 170 g capers
- 400 g oil
- pepper
INSTRUCTIONS
- Knead all ingredients together, except for the ingredients for the filling, for 5 minutes on the 1st speed and 2-3 minutes on the 2nd speed.
- Next, add the ingredients for the filling and mix on the 1st speed and mix until combined. Let the dough rest for 30-40 minutes.
- Cut 300 g and put on a round 15 cm tin, and bake for 15-20 minutes.
- Sprinkle with sesame seeds and bake at 205°C for 30-40 minutes.
- Once we have given them the desired shape and put them on the tin, use as much as we want and freeze the rest.
