French Pastry Dough

Instructions

  1. Mix together the flours, salt, water and aromatic butter for 2 minutes on the 1st speed and 4 minutes on the 2nd speed
  2. Cover the dough and allow to rest in the refrigerator for 30 minutes
  3. Take the dough out of the refrigerator and roll out it to No. 15 and add the margarine so that all the dough is covered
  4. Firstly, roll out to No. 12, fold in quarters and allow to rest for at least 15 minutes. Secondly, roll out to No. 10, fold in thirds and allow to rest for at least 15 minutes
  5. Lastly, roll out to No. 10, fold in thirds and allow to rest for 1 hour in the refrigerator or roll out the dough to No. 2-2.5 the following day
  6. Cut, add the filling of your choice, coat with egg and bake at 160-165°C for 30 minutes
