Cranberry & Walnut Bread Rolls
INGREDIENTS
- 400 gr Type 55% flour
- 400 gr Super Amerikis
- 12 gr. salt
- 100 gr. sugar
- 80 gr. margarine
- 50 gr. 26% fat powdered milk
- 100 gr. eggs
- leavened dough
- 450-500 gr. water
Ingredients for the filling
- 200 gr. cranberries
- 250 gr. walnuts
Ingredients for the leavened dough
- 400 gr Type 55% flour
- 400 gr Super Amerikis
- 70 gr. yeast
- 100 gr. water
Mix the ingredients well and place the bowl in the fermentation oven for 20-30 minutes until the dough doubles.
INSTRUCTIONS
- Mix in the sugar, salt, powdered milk and margarine for 2-3 minutes.
- Add the eggs and finally 450 gr of water, mixing continuously. Immediately add the flour, leavened dough and a little water if needed. The overall time is about 5 minutes.
- Finally pour the filling beating on the 2nd speed for 2 minutes.
- Cover the dough and allow to rest for 15 minutes.
- Cut the dough into 100-150 gr pieces and ferment for 45-50 minutes, coat with egg and bake at 230°C for 15 minutes.
