Seed process
- Toast 400 gr. grains (sesame seeds-flax seeds-sunflower seeds-wheat flakes)
- As soon as they come out of the oven, add 400 gr. water and place in the fridge so that they cool down well
- Mix all the ingredients together on the 1st speed for 2 minutes and as long as necessary on the 2nd speed, until the dough is smooth and elastic
- Allow the dough to rest for 20-30 minutes
- Cut into 80-120 gr. pieces and mold into balls. Dip into water-liquid malt mix and then coat with sesame-pumpkin-sunflower seeds
- Ferment for 30-45 minutes and bake at 210 degrees with steam
