  1. Knead for 5' on 1st speed and 4 on 2nd
  2. Rest the dough for 40'
  3. Cut into 900 gr. pieces and knead firmly
  4. Cover with sesame seeds and ferment for 25-35'
  5. Score and bake και φουρνίζουμε at 210°C for the rest 40΄ with plenty of steam
